Bessa Valley
The Valley rested for decades. It was gathering
strength and giving it now to the light green
vines. It is different now. The only reminder
of the years is the tree in the middle of the
massif. This is the plant with the deepest roots
here, the bridge between the past and the present.
In July the vine-growers take a look at each
vine, cut off some of the still green grapes and
lay them on the ground. The vine must bear a kilogram
of fruit.
Only one kilogram, only 450 grapes. Each grape
must be perfect.
When they reach a perfect ripeness, the grapes
are cut off the vine, each grape separated one
by one and put in the fermentation vessels. They
are not crushed or forced in any way. Shortly
after, each grape will burst under its weight
and release a few drops of fragrant juice. This
juice will become Enira.
